                              Green Bean Casserole

                              1 pound green beans
                              2 Tablespoons earth balance
                              12 oz baby portabella mushrooms
                              1 clove garlic
                              ¼ teaspoon nutmeg
                              2 Tablespoons four
                              1 cup veggie stock
                              1 cup plain soymilk
                              French’s fried onions

                              • Boil green beans in water until done. In a separate skillet, melt earth balance over medium high heat. Add mushrooms, salt, pepper and sauté for 4 to 5 minutes. Add garlic, nutmeg, and cook 1 minute. Sprinkle flour in the pan and stir for 1 minute. Add broth and soymilk and simmer until thickened. Drain beans and place in baking dish. Cover the beans with mushroom gravy. Sprinkle with French’s fried onions. Bake 15 minutes at 400 degrees.
